Cook dinner with me, and let's make croquettes. I wanted to utilize pantry items, so I opted for instant mashed potatoes and corn. You definitely can use fresh potatoes, but this made a quick recipe.
INGREDIENTS
8oz Instant mashed potatoes
2 3/4 cup hot water
1/4 tsp onion powder
1/4 tsp garlic powder
salt and pepper to taste
1 cup mozzarella cheese
1 drained can of corn
BATTER/DREDGE
1 large egg
1/2 cup water
2 Tbsp mayo
2/3 cups flour
3 cups Panko bread crumbs
